I'll remind: what we do is an ensemble performance. The cocktails, the food, the music, the art, the location. Our most recent dinner included live music by Tom Brousseau (um, this guy is a contemporary of Fiona Apple and Jon Brion :), visual projected art by SunDeep (an amazing mulit-talented artist), a give-away of hand printed and hand bound, glued and tied book by Kate Findley (another excellent and multi-talented artist) some beautifully crafted and deliciously inventive cocktails by mixologist Nick Feller (who also is an artist of many talents) and yes... 12 courses of food (vegetarian this time!) with four different proteins (the blind shall someday see) all the while a documentary was being filmed by a completely unrelated group of filmmakers. Surprise! Now you know.
I bill pHeast as live art because we have a variety of people and variables in our events and we like to highlight up and coming artists and innovative collaborators. Am I an amateur molecular gastronomist? Whaaaaat? who is? One thing i know... if im going to a movie, i talk about the movie as it pertains to itself... I include the variables. How could you possibly talk about the Wizard of Oz and not mention the yellow brick road or the poppie field and leave out the tin man and then lie about the scarecrow and ultimately deny that the wizard exists... unless... I just can't imagine that and fortunately I don't have to. I'm looking for the article in the LA Times I believe where an actual accomplished writer is calling for the end of the "hamburger wars" and asks when shall LA's food zombies wake up to the notion that hamburgers and hotdogs are the most deleterious and childish food we can fetishize... and that's what's going on. Here's your safe story: something tells me other forces are at bray, sheep.

Here I'm cooking 10 courses of ENTIRELY organic food based on various regions of India yet pH alchemized <3 Their kitchen is amazing and this PNW forestry is almost as delightful as going home to Tennesee. It's been a few months since our last pHeast which was the second of a series, a trilogy, the finale of an idea, the last of which will finally appear not as a pHeast dinner but a pHeast story. See, pHeast has always been about artistic expression… poetry, cosmology, archaeology, finance… but all great visions take time to blossom.. to become aware of themselves… to become alive! and guess what?…. It's alive! I think we know what pheast is now. For sure It's a traveling kitchen band redefining fine dining but.. what also happens is we writes, paints, parties, designs and makes your social life more interesting. We refuse rules (even that one) and what you will see from us will definitely challenge any notion of pretty much anything you can notion up.. we got potion for those jokes. we hold candles for ever cause ever loves light.
